Technology for the management of under-value eggs to prevent food waste

Project objectives:
The aim of the project is to develop technology for the management of eggs that are damaged or unsuitable for packing (poor shell) and sale and considered waste requiring disposal. It is assumed that the technology developed as part of the project will be used through a technological line built with a maximum capacity of 150kg/h. The developed technology will make it possible to produce egg mass or egg white and yolk separately with an extended shelf life.
Planowane efekty
The outcome of the project will be a new technology for the management of under-valued eggs through fractionation and preservation, which will reduce food waste in the egg marketing process. The technology will be realised through the developed technological line with a maximum capacity of 150kg/h.
The recipient of the project results will be the Applicant, Podkarpackie Gospodarstwo Drobiarskie OVO-RES Sp. z o.o.. The technology will be introduced into the Applicant’s own activities through the implementation of the developed technological line in the production plant. Recipients of the new product (pasteurised egg masses) will be entrepreneurs using eggs for production of final products (e.g. ice cream parlours, confectioneries).
