Description:
The subject of the application is a wet, fat-free batter for coating food products, which is convenient to use by applying it either by dipping or spraying, or by pouring for mechanically formed products, especially products composed of raw ingredients in the form of particles. In addition, its composition allows it to be prepared under industrial conditions and protects the mechanically formed product from absorbing fat during frying. The wet coating, with a concentration of 4% to 10%, contains sodium alginate in an amount of 0.1% to 1% by weight in relation to the amount of the wet coating mixture, a substance containing divalent calcium ions in the form of calcium lactate in an amount of 0.2%÷2% by weight and, alternatively, a mineral preparation from red algae of the Lithothamnion species in an amount of 0.3%÷3% by weight, in relation to the amount of the wet batter recipe. E1414 starch was used as the modified starch in an amount of 49%÷80% by weight in relation to the dry weight of the breading ingredients, corn starch is 7%÷12% by weight in relation to the dry weight of the breading ingredients, and maltodextrin is 11% ÷36% by weight in relation to the dry weight of the breading ingredients, while sodium bicarbonate is 0.1%÷1% by weight in relation to the dry weight of the breading ingredients, and sodium chloride is 0.1%÷1% by weight in relation to the dry weight of the breading ingredients.
Status of legal protection:
The technology consists of patent Pat.247054 granted by the Patent Office of the Republic of Poland, in force since 3 July 2024.
The property rights to the invention are vested in: Łukasiewicz Research Network – Poznań Institute of Technology and the Institute of Agricultural and Food Biotechnology – National Research Institute.
